Lakrori with two layers of dough, baked in a saç and considered one of Korçë’s traditional dishes, has now also become part of culinary tourism, where both locals and foreigners can closely observe the preparation process.
This traditional dish has always been an important part of social life in Korçë, featured at family celebrations, gatherings with friends, and community activities. Today, lakrori baked in a saç has also turned into a gastronomic attraction for tourists, who increasingly seek it out as part of the authentic Korçë experience.
Prime Minister Edi Rama shared images on social media from the preparation of lakrori at the enterprise “Shija e saçit,” located in the heart of Korçë’s Old Bazaar, lovingly prepared by Edlira and Gramoz Shelanji.
Rama said that the Shelanji couple keep alive one of the most beautiful Korçë traditions, a unique experience that attracts visitors and tourists every day.
Meanwhile, Edlira says that this tradition has been passed down from her grandmothers.
“They used to make lakrori in a saç, and I decided to continue this tradition. My work is based on handmade products. The rolling pin is 200 years old. It was passed down by my grandmothers and their grandmothers, and that rolling pin has been handed down from generation to generation,” she said.
“Our food is very popular with foreign tourists, who want to eat something traditional.
Many of them film us during the process as well. While I prepare the lakrori, Gramoz takes care of the baking. Foreign visitors are impressed by the way it is baked. We receive thanks from our customers, and I feel very satisfied,” Shelanji said.
At a time when modern cuisine is gaining more and more ground, lakrori baked in a saç remains a living testament to the preservation of Korçë’s cultural and culinary identity, showing that traditional flavors continue to hold a special place in Albanian culture.
